    field into our hands. We work with care, we respect the characteristics of our food and the history of who has produced it.
  5. We look at food with a competent eye, our cooking techniques are honest and natural, traditional and modern at the same time.
  6. We show the result of our research and our work with a pure, home-style feeling, which also defines our Mediterranean roots and our deep identity.
  7. While cooking we keep questioning ourselves because we believe that our daily choices should suit the needs of both today’s and future generations.
  8. We listen to our co-workers, our guests, and the natural environment that surrounds us.
